Course: Breads and Muffins
-
Quinoa Cornbread

This gluten-free updated version of classic cornbread has more flavor and texture than most, thanks to the cooked quinoa folded into the batter and sprinkled on top. Plus, quinoa is a healthy whole grain! Serve squares of it underneath, alongside or crumbled on top of beans, soup, chili, greens or roasted veggies.
-
Spiced Gingerbread with Coffee and Molasses

This rich, dark holiday bread is perfect as is. But if you’re in the mood to dress it up, serve warm slices with a scoop of raspberry sorbet, dollop of lemon curd or smear of lowfat cream cheese.
-
Spiced Parsnip and Apple Muffins

Think carrot muffins with a unique twist. These muffins are moist and delicious, the perfect treat with a spot of afternoon tea.
-
Lemon-Ginger Streusel Bread

Use this same batter to make smaller loaves for gift-giving, if you like, and download our gift tag. For an extra treat, toast slices and serve for breakfast or an afternoon snack with cream cheese for spreading.
-
Yogurt Honey Health Muffins

This recipe comes to us courtesy of the Renegade Lunch Lady Chef Ann Cooper and her book Lunch Lessons: Changing the Way We Feed our Children. The addition of yogurt not only makes these muffins moist, but helps them stay fresh in an airtight container for up to three days and still taste wonderful. If cake flour is not readily available, all-purpose flour can be substituted. The muffins will be slightly denser, but will taste just as good.
-
Zucchini Bread

For a special treat or quick breakfast snack, toast slices of this fragrant quick bread and spread with apple butter or Neufchâtel cheese.
-
Whole Wheat Apricot Scones with Flax Seeds and Oats

These hearty scones are deliciously satisfying. Using a food processor to make the dough means quicker prep time and easy clean-up.
-
Buttermilk-Teff Biscuits with Scallions

-
Buttermilk Rolls

These rich and fluffy rolls make a great accompaniment to any dinner and are the perfect easy bread for beginning bakers. Make large pull apart rolls or individual cloverleaf rolls with the same dough.
