Serves 4
Romantic dinner for two or restaurant-style treat for the whole family — either way this high-style, low-country meal is sure to impress.
Ingredients
3 (8-ounce) fresh monkfish fillets
1 (12-ounce) package cooked sausage, such as apple gouda
1 (16-ounce) bag cole slaw mix
2 gala apples, sliced
2 cups seafood broth
1 tablespoon caraway seeds
Salt and pepper, to taste
Method
Cut each monkfish fillet into 5 pieces; set aside. Thinly slice sausage; mix with slaw and apples in large bowl. Spread into stovetop casserole or large sauté pan. Add broth and cook over medium heat 15 minutes; stir occasionally. Add fish, sprinkle with caraway seeds, season with salt and pepper; cover and cook additional 8 to 10 minutes, or until fish flakes easily with fork.
